Job Description

Role Overview

This position is the on-the-ground guardian of food safety and hygiene across a luxury hotel’s entire food and beverage operation. Day to day, you will inspect kitchens, train food handlers, audit compliance against brand and regulatory standards, and step in early when risks emerge. Your work directly protects guests, upholds the property’s reputation, and keeps every outlet aligned with both internal audits and government requirements.

Key Responsibilities

  • Perform daily inspections of kitchen environments, personal hygiene practices, and food handling procedures, then document findings and prescribe corrective actions.
  • Deliver engaging food hygiene training for new hires, existing associates, and trainees, and periodically refresh standards to keep everyone current.
  • Audit operations against Brand Standard Audit (BSA) criteria and local food safety regulations, closing any gaps with clear action plans.
  • Identify high-risk areas across all food production and service zones, and take proactive steps to prevent contamination or non-compliance before issues escalate.
  • Advise culinary and purchasing teams on product labeling requirements so that all packaged or displayed food meets government and licensing mandates.
  • Coordinate deep-cleaning initiatives across all food and beverage areas, tracking trends and suggesting improvements to cleaning protocols.
  • Investigate and resolve hygiene complaints from guests or local health authorities, maintaining thorough records and follow-up communication.
  • Collaborate with pest control providers to address infestations, monitor service quality, and ensure preventive measures stay effective.
  • Partner with culinary leadership and kitchen staff to conduct internal BSA reviews, vendor facility inspections, and equipment checks, ensuring all defects are remedied by the right parties.

Requirements & Qualifications

  • A bachelor’s degree in Environmental Health, Hotel and Restaurant Management, Hospitality, Business Administration, or a related field from an accredited university.
  • At least three years of hygiene, food safety, or sanitation management experience in a luxury or five-star hotel, or an equally large hospitality operation.
  • Mandatory HACCP certification.
  • Food Safety Management System (FSMS) certification such as ISO 22000 or FSSC 22000 is strongly preferred.
  • Solid knowledge of government food labeling rules, licensing conditions, and code-of-practice requirements for food businesses.
  • Strong communication and training skills to influence food handlers at all levels, from line cooks to management.
  • Ability to conduct structured inspections, analyze compliance gaps, and produce clear, actionable corrective plans.
