We are seeking a seasoned Indian CDP Chef to take ownership of our Indian culinary segment at our Mara River location. Your primary mission is to deliver an authentic and elevated dining experience, ranging from robust tandoori specialties to delicate biryanis and curries. As a Section Lead, you are responsible for the end-to-end production cycle—ensuring that every dish maintains the perfect balance of spices, texture, and visual appeal. You will bridge traditional techniques with modern presentation, maintaining strict food safety standards while optimizing ingredient usage to protect project margins.
Key Performance Areas
Authentic Culinary Execution

Spearhead the preparation of a comprehensive Indian menu, including signature curries, tandoori meats, authentic breads (Naan/Roti), and premium biryanis.

Manage the mise en place process to ensure all specialty spices and fresh ingredients are prepped for seamless service.

Maintain absolute consistency in flavor profiles and portion sizes, strictly following standardized house recipes.

Collaborate on menu engineering, introducing innovative recipes and seasonal specialties that resonate with a global clientele.
Operational Stewardship

Enforce rigorous food safety and sanitation protocols, ensuring all workstations and equipment meet health department standards.

Oversee stock rotation (FIFO) and ingredient labeling to ensure maximum freshness and minimal spoilage.

Identify and implement cost-saving measures through precise portion control and efficient production planning.

Monitor the functionality of specialized kitchen equipment, such as tandoor ovens, ensuring they are operated and cleaned safely.
Leadership & Service Excellence

Partner with the Executive Chef to synchronize kitchen workflows during high-traffic service periods.

Provide technical guidance and on-the-job training to junior kitchen staff to elevate the section's overall performance.

Success Profile

Education: Diploma or Certificate in Culinary Arts or an equivalent professional qualification.
