We are seeking a vigilant Food & Beverage Controller to act as the financial guardian of our hotel’s dining and bar operations. Your objective is to bridge the gap between procurement and profit by implementing airtight cost-control measures. You will be responsible for monitoring daily usage, identifying variances in stock levels, and ensuring that every purchase aligns with our quality and pricing standards. By meticulously tracking wastage and optimizing inventory turnover, you will play a central role in driving the hotel’s bottom-line performance.
Fiscal Oversight & Cost Optimization
Monitor daily F&B expenditures against projected budgets to ensure operational alignment.
Execute deep-dive variance analysis between actual consumption and standard recipes to identify leakages.
Generate high-impact cost control reports that provide actionable strategies for waste reduction.
Verify supplier invoices and delivery notes to ensure pricing and quality meet established hotel standards.
Inventory Governance & Stock Integrity
Lead regular physical stock counts and reconcile them with system records to eliminate discrepancies.
Monitor product movement and usage trends to mitigate risks associated with slow-moving stock or expiry.
Enforce standardized storage and issuance protocols to prevent losses and maintain ingredient freshless.
Liaise with the procurement team to resolve supplier discrepancies and streamline the purchasing cycle.
Systems & Data Management
Leverage POS and ERP systems to track real-time sales and inventory data with precision.
Maintain accurate electronic records of all F&B transactions and financial adjustments.
Support internal audit processes by providing transparent and organized financial documentation.
Prepare weekly and monthly performance summaries for management review.
The Essentials
Education: Degree in Hospitality Management, Finance, Accounting, or a related field.
Domain Expertise: Minimum of 2+ years specifically in F&B cost control or hospitality finance.
Technical Proficiency: Strong command of Microsoft Excel and familiarity with hotel-specific POS/ERP systems.
Advantage: CPA certification is considered a distinct plus.
