Purpose of the Role
We are looking for a dedicated Commis Chef (Pastry) to join our culinary team in the heart of the Mara. Your mandate is to support the Pastry Chef in the daily production of high-quality breads, desserts, and pastries that define our guest experience. You will be expected to master standardized recipes, ensure precise ingredient measurements, and maintain the aesthetic integrity of our plated desserts. This role requires a blend of technical baking skill and rigorous attention to food safety, ensuring that every batch meets our elite standards of taste, texture, and presentation.
Key Workstreams
Pastry Production & Finishing

Prepare and bake a diverse range of items including artisanal breads, cakes, cookies, and signature desserts.

Execute bulk production cycles while maintaining individual product consistency and quality.

Assist in the intricate decoration and finishing of pastries, ensuring every item is service-ready.

Monitor baking environments, focusing on precise oven temperatures and timing to prevent spoilage.
Operational Hygiene & Safety

Uphold uncompromising standards of kitchen sanitation and personal hygiene in line with health regulations.

Manage the rotation and labeling of ingredients, utilizing FIFO principles to maintain freshness.

Maintain a pristine workstation, ensuring all equipment and utensils are sanitized after each use.

Document temperature logs and production records to assist in quality control audits.
Inventory Management & Collaboration

Monitor levels of baking supplies and report any shortages or ingredient spoilage to the supervisor.

Minimize wastage through meticulous portion control and efficient handling of raw materials.

Collaborate with the broader kitchen team to support buffet setups, special events, and high-volume orders.
