We are seeking a highly skilled, culinary-passionate Chef (Choma) to anchor our busy live-grilling station. Your primary objective is to manage the daily preparation, seasoning, and roasting of high-quality local meats, ensuring consistent taste textures and presentation styles for our guests. This position blends intense physical station management with precise portion control; you will guide food operations from checking the freshness of daily butchery deliveries and managing coal temperatures through to direct plate assembly and line execution. The role demands an agile grill specialist who understands traditional nyama choma preferences and can work efficiently under high-pressure turnaround windows.

Core Competencies

Meat Engineering, Seasoning & Roasting

  • Roast and grill diverse cuts of meat including beef, goat, chicken, and pork according to established house recipes and cutting styles.

  • Formulate house marinades, apply uniform spice rubs, and execute portion-control prep to protect taste consistency across every serving.

  • Manage grilling temperatures, charcoal distribution, and timing parameters closely to prevent food burning or undercooking.

  • Review inbound raw food supplies daily to verify meat quality, freshness indicators, and accurate grade standards.

Station Operations & Waste Mitigation

  • Maintain absolute cleanliness, organization, and sanitation across the live grilling area, surrounding tables, and meat hooks.

  • Control kitchen waste streams through airtight ingredient storage, proper temperature cooling, and exact carving practices.

  • Check and maintain the operational safety of roasting hoods, sharp utility knives, temperature probes, and fire containment gear.

  • Execute structured opening fire setups and closing kitchen shutdowns, ensuring coals are safely extinguished.

Stock Architecture & Reporting

  • Monitor ongoing stock levels for raw meats, unique spices, wood charcoal, and supplementary kitchen cleaning agents.

  • Compile and relay material depletion updates to the kitchen supervisor to prompt timely supplier restocks.

  • Collaborate seamlessly with line food runners and service waiters to dispatch orders smoothly and prevent guest table delays.

Regulatory Conformance & Menu Inputs

  • Enforce total adherence to public health sanitation regulations, food handling guidelines, and company safety protocols.

  • Assist kitchen management teams with seasonal menu development by testing and proposing innovative grilled food combinations or side platters.

  • Maintain top-tier personal hygiene, a pristine uniform layout, and professional composure during high-volume customer hours.

Skills & Experience Required

Minimum Entry Criteria

  • Academic Foundation: Certificate in Food Production, Culinary Arts, or a complementary hospitality training track is a distinct advantage.

  • Practical Track Record: Minimum of 2 years of hands-on experience operating as a dedicated choma chef or grill cook in a high-traffic establishment.

  • Technical Knowledge: Deep understanding of specific meat cuts, localized tenderizing techniques, coal heat profiling, and rustic food plating.

  • Operational Endurance: Physically fit and fully capable of standing by a hot grill for long stretches while operating under rapid orders.
