Job Description

Role Overview

This internship places you at the centre of day-to-day food safety and quality assurance in a busy food-service or retail setting in Karen, Nairobi. You will help keep food safe from receipt to service by checking hygiene, temperatures, storage conditions, and documentation, then flagging anything that falls short of expected standards. The role matters because consistent food safety protects customers, supports regulatory compliance, and prevents costly quality failures.

Key Responsibilities

  • Carry out routine checks on food handling, preparation, storage, display, and general cleanliness across the premises.
  • Record temperatures for fridges, freezers, hot-holding units, and other critical equipment, and escalate readings that fall outside safe ranges.
  • Inspect food storage rooms, shelving, containers, and equipment for hygiene, pest, or contamination risks.
  • Verify that sanitation and personal hygiene practices are followed by staff during shifts.
  • Keep food safety logs, checklists, and inspection records accurate, complete, and up to date.
  • Support internal hygiene and food safety inspections, including follow-up on corrective and preventive actions.
  • Monitor expiry dates and stock rotation, removing or reporting items that are no longer suitable for use.
  • Help implement HACCP and related food safety procedures, and assist with staff awareness on hygiene and safe food handling.

Requirements & Qualifications

  • Diploma or degree in Food Science, Food Technology, Food Safety, Nutrition, Hospitality, or a closely related field.
  • Recent graduate or current student looking for hands-on experience in food safety and quality control.
  • Basic working knowledge of food safety, hygiene, HACCP principles, and quality assurance practices.
  • Strong observation skills and a careful, detail-focused approach to routine checks and records.
  • Clear communication and the ability to work well within a team.
  • Willingness to learn and work in a food-service or retail environment.
  • Ability to follow procedures accurately and maintain reliable documentation.
  • Added advantage: basic familiarity with food safety regulations.
