Role Overview
A Pizzaiolo sits at the heart of our kitchen, turning carefully fermented dough and thoughtfully prepared ingredients into pizzas that meet the standards of traditional Italian cookery. Day to day, this means managing the full lifecycle of a pizza — from mixing and proofing dough through to pulling finished pies from the oven at peak quality — while keeping your station clean, organised, and running in step with the rest of the kitchen brigade. This role matters because the consistency and craft of our pizza output directly shape how guests experience the restaurant, so precision, speed, and genuine respect for the tradition behind each pie are essential.
Key Responsibilities
- Mix, proof, and portion pizza dough along with sauces, toppings, and other base ingredients in line with established recipes and kitchen standards.
- Hand-stretch, shape, and build each pizza according to incoming orders while honouring traditional Italian technique.
- Fire and monitor pizzas in the oven, adjusting timing and heat to achieve the required crust, colour, and doneness.
- Uphold uniformity across every pie — taste, portioning, and plating must stay consistent from the first order of the shift to the last.
- Keep workstations, tools, and storage areas to strict food-hygiene and sanitation standards throughout service.
- Track ingredient stock levels, rotate and store food correctly, and actively reduce kitchen waste.
- Clean, maintain, and service pizza ovens, prep surfaces, and related kitchen equipment.
- Coordinate with fellow kitchen staff to keep ticket times tight and service flowing smoothly.
Requirements & Qualifications
- At least 2 years of hands-on experience as a Pizzaiolo, Pizza Chef, or Pizza Maker.
- Prior experience in an Italian restaurant setting is required.
- Deep familiarity with Italian cuisine, traditional pizza-making methods, dough fermentation, and oven operation.
- Solid grounding in food safety, hygiene regulations, and sanitation practices.
- Comfort working under high-volume pressure in a fast-paced kitchen without sacrificing speed or attention to detail.
- Strong teamwork and communication skills.
- Formal culinary training or certification is a distinct plus.
