Job Description

Role Overview

You will be the front-of-house authority for a luxury safari camp’s dining and bar areas, making sure every guest meal feels effortless, elegant, and personal. This is a hands-on supervisory position where you direct service staff, maintain exacting standards, and coordinate with the kitchen so every plate and pour arrives as intended. You will live on-site and work a rotational schedule, so you will become an integral part of a tight-knit team delivering world-class hospitality in a remote wilderness setting.

Key Responsibilities

  • Oversee all restaurant and bar shifts, setting the pace and tone so service flows smoothly from opening to last guest departure.
  • Lead daily briefings for waiters and bartenders, assigning stations, reviewing special requests, and confirming dietary or allergy notes.
  • Step onto the floor during peak moments, taking orders, serving tables, and assisting bartenders to maintain speed and polish.
  • Audit mise en place before service, checking table setups, glassware, linen, and bar stock for a flawless first impression.
  • Coordinate closely with the kitchen team on timing, menu changes, and special events such as bush dinners or private dining experiences.
  • Handle guest concerns immediately, resolve issues with discretion, and follow up to ensure satisfaction and accurate billing.
  • Supervise cash, card, and room-charge transactions, ensuring all checks are posted correctly and shift reports are completed accurately.
  • Maintain stock levels, monitor wastage, and enforce hygiene and safety standards across all front-of-house areas.

Requirements & Qualifications

  • Minimum 3 years of food and beverage service experience in a 4-star or 5-star hotel, luxury lodge, or safari camp.
  • At least 1 year in a supervisory role directly managing waiters, bartenders, or both.
  • Proven track record of running a full restaurant or bar shift independently, including opening and closing duties.
  • Strong beverage knowledge covering wine service, classic cocktails, and bar presentation.
  • Excellent spoken and written English, with clear communication across teams and with guests.
  • Willingness to live at camp, work rotating shifts including weekends and public holidays, and follow a rotational leave schedule.
  • Calm, guest-first mindset with high standards for service, integrity, and teamwork.
  • Preferred: prior experience in a safari camp or luxury lodge; a diploma in hospitality or equivalent qualification.
