Chef (Hot Kitchen)

Role Overview

As a Hot Kitchen Chef, you will prepare and plate meals for breakfast, lunch, and dinner, working to established recipes and service standards. Your work will help keep food quality consistent, service moving during busy periods, and kitchen practices safe and efficient.

Key Responsibilities

• Prepare and cook local and international hot dishes, maintaining consistent flavour, portion size, and presentation.
• Complete mise en place before service, including preparing ingredients and setting up your workstation.
• Respond to dietary requests and allergen requirements while taking care to avoid cross-contamination.
• Follow HACCP procedures and maintain clean, hygienic food preparation and storage areas.
• Check ingredient freshness and ensure food is stored and held at appropriate temperatures.
• Track ingredient levels, support stock counts, label and rotate supplies using FIFO, and help reduce spoilage through accurate portioning.
• Use kitchen equipment safely, report faults promptly, and coordinate with other kitchen stations and service staff to dispatch orders on time.
• Guide junior cooks and kitchen assistants during service as needed.

Requirements & Qualifications

• Diploma or degree in Culinary Arts, Professional Cookery, Food Production, or a related hospitality discipline.
• At least 2–3 years of hands-on experience in a professional hot kitchen, such as a hotel, restaurant, resort, or catering operation.
• Experience preparing a range of local and international dishes in a fast-paced service environment.
• Sound knife skills and practical ability with cooking methods such as grilling, frying, roasting, and sautéing.
• Good working knowledge of HACCP, kitchen hygiene, food storage, and cross-contamination prevention.
• Ability to stay organised and composed during busy service periods and work a full-time on-site shift schedule in Jogoo Road, Nairobi.
