DUTIES AND RESPONSIBILITIES
Maintain Cleanliness and Sanitation Standards
- Ensure all kitchen and dishwashing areas, floors, surfaces, and storage spaces are kept clean, dry, and hygienic at all times.
- Thoroughly clean and sanitize kitchen tools, cooking equipment, utensils, and dishes according to established protocols.
- Follow cleaning schedules and checklists to ensure all areas meet health and safety standards.
Dishwashing and Waste Management
- Operate dishwashing machines and hand-wash items as necessary, ensuring all are spotless and ready for immediate reuse.
- Sort and properly dispose of waste, recyclables, and food scraps in accordance with kitchen hygiene policies.
- Empty and clean trash bins regularly to prevent odors and contamination.
Support to Kitchen Operations
- Assist chefs and kitchen staff by ensuring necessary tools and equipment are clean, available, and in their proper places.
- Restock utensils, crockery, and kitchen supplies in preparation for upcoming meal services.
- Maintain cleanliness around prep stations to support smooth kitchen workflow.
Inventory and Supplies Handling
- Assist in receiving, unpacking, and properly storing kitchen deliveries.
- Ensure proper rotation of stock (First-In, First-Out – FIFO) to reduce waste and spoilage.
- Alert supervisors when cleaning supplies or kitchen items are running low.
Compliance with Safety and Hygiene Regulations
- Adhere strictly to hygiene practices, including proper handwashing, use of gloves, and food safety standards.
- Wear appropriate personal protective equipment (PPE) such as aprons, gloves, and non-slip shoes.
- Report any hygiene risks, broken equipment, or safety hazards immediately to the supervisor or manager.
Assist During Busy Service Times
- Quickly respond to the needs of the kitchen team during peak hours, including clearing used dishes, refilling water stations, or cleaning spillages.
- Remain calm under pressure while maintaining speed and accuracy in completing tasks.
General Facility Support
- Maintain cleanliness in staff areas, restrooms, and guest-facing spaces if required.
- Support any ad hoc cleaning or maintenance requests from supervisors.
- Participate in end-of-day cleaning routines and help prepare the kitchen for the next day’s service.
KEY REQUIREMENT SKILLS AND QUALIFICATION
- Minimum of 2 years of experience in a steward or kitchen assistant role, preferably in a busy restaurant or hotel setting.
- Strong understanding of hygiene, sanitation, and food safety standards.
- Physical stamina and ability to stand for extended periods and lift moderate weights.
- High attention to detail and cleanliness.
- Ability to multitask and work efficiently in a fast-paced environment.
- Reliable, punctual, and a team player.
- Basic communication skills in English or Swahili.
