Role Overview
This role is the heart of the restaurant's beverage experience, combining hands-on cocktail craftsmanship with attentive guest engagement. Each shift involves preparing a wide range of drinks, curating signature serves, and maintaining a polished bar environment while also supporting private events and off-site catering functions. You will be relied upon to balance speed, consistency, and creative presentation, ensuring every guest receives a memorable drink that matches the culinary standards of the house.
Key Responsibilities
- Craft and serve a full spectrum of beverages, including cocktails, mocktails, wine, beer, spirits, juices, and soft drinks, adhering strictly to established recipes, portion specifications, and plating or glassware standards.
- Design and introduce original cocktails and alcohol-free signature drinks that align with the restaurant's menu theme and seasonal offerings.
- Engage guests at the bar with genuine hospitality, taking orders promptly, offering tailored pairing recommendations, and proactively highlighting specials, premium spirits, and bottle service.
- Prepare the bar area before service by stocking ice, garnishes, glassware, tools, and ingredients; maintain continuous cleanliness and organisation of all work surfaces, equipment, and storage zones throughout the shift.
- Monitor inventory levels, request replenishment when supplies run low, and receive deliveries with accurate counting, recording, and proper storage of all beverage products.
- Operate the point-of-sale system correctly for order entry, payment processing, voiding mistakes, recording comps, and documenting any wastage, breakage, or discrepancy in line with restaurant policy.
- Enforce responsible alcohol service by checking identification, observing guest behaviour, refusing service to intoxicated patrons, and safely handling all opened bottles and perishable mixers.
- Support banquet and off-site catering events by arranging portable bars, transporting supplies, and serving beverages efficiently in high-pressure, temporary setups.
Requirements & Qualifications
- Formal mixology or bartending certification from a recognised school or training programme is strongly preferred.
- A minimum of two years of hands-on experience working as a mixologist or bartender in a busy bar or restaurant environment.
- Comprehensive understanding of classic and modern cocktail techniques, spirit and wine profiles, beer styles, garnish preparation, and appealing drink presentation.
- Demonstrated ability to create commercially viable signature beverages with balanced flavour profiles and visual appeal.
- Solid track record in inventory management, portion control, and accurate use of POS systems.
- Strong interpersonal skills with a sales-oriented mindset for upselling and guest engagement.
- Familiarity with food safety, hygiene protocols, and legal requirements around responsible alcohol service.
- Personal qualities include reliability, honesty, composure under pressure, meticulous attention to detail, and a well-groomed professional appearance.
- Physical stamina to stand for extended durations, lift beverage crates and bar equipment, and work late shifts, weekends, and public holidays as scheduled.
- Willingness to participate in a practical skills assessment and in-person interview for mixology technique, speed, and bar setup proficiency.
