Job Descriptions
Job Descriptions at this level will entail:-
Developing and reviewing menus;
Supervising food preparation (mise-en-place) and production;
Maintaining stock items for production;
Receiving produce as per specifications;
Forecasting food production needs;
Maintaining food production records;
Monitoring work orders on equipment;
Taking stock of the food stores; and
Supervising staff working under the officer.
Job Specifications
For appointment to this grade, an officer must have: -
At least nine (9) years cumulative relevant work experience, three (3) at the grade of Chef I or in a comparable position;
Diploma in either pastry and bakery, culinary art, food production (both mass food production and a lar carte) or equivalent qualification from a recognized institution;
Certificate of medical examination in line with the Food, Drugs and Chemical Substance Act;
Certificate in Supervisory Skills Course lasting not less than two (2) weeks from a recognized institution;
Proficiency in computer applications; and
Shown merit and ability as reflected in work performance and results.
