Job Summary:
The Chef-Pastry is responsible for exhibiting creative baking and decorating talents while leading the pastry culinary team in preparing high-quality and consistent pastries for all areas of the hotel. They will focus on improving guest and employee satisfaction while adhering to the operating budget. This role involves training and developing the team to achieve desired results while maintaining standards and ensuring food sanitation and safety.
Candidate Profile:
- High school diploma or GED.
- 4 years of experience in the culinary, food and beverage, or related professional area; or a 2-year degree in Culinary Arts, Hotel and Restaurant Management, or a related major plus 2 years of experience in a similar role.
- Demonstrated leadership skills with the ability to influence and motivate others.
- Strong financial acumen and decision-making abilities.
- Honest and possesses integrity, serving as a role model for appropriate behaviors.
- Trustworthy and builds mutual trust, respect, and cooperation among team members.
Core Work Activities:
Leading Pastry Culinary Team
- Leads and manages the pastry culinary team, ensuring smooth day-to-day operations.
- Demonstrates effective interpersonal and communication skills to influence, encourage, and support team members.
- Establishes and maintains open, collaborative relationships with team members, promoting a positive and productive work environment.
- Sets a positive example by demonstrating appropriate behaviors and professional attitude.
- Maintains and enhances employee productivity and motivation.
- Ensures employees understand expectations, parameters, and receive necessary training.
- Fosters employee feedback through an “open door” policy and addresses concerns or issues promptly.
- Supervises and coordinates the activities of cooks and workers involved in food preparation.
Ensuring Culinary Standards and Responsibilities are Met
- Applies creativity by developing new applications, ideas, relationships, systems, or products related to baking and pastry.
- Recognizes and maintains superior quality products, presentations, and flavor.
- Maintains high standards for food preparation handling, correct storage, and purchasing.
- Supports procedures for food and beverage portion control and waste control.
- Ensures compliance with all applicable laws, regulations, and company standards.
- Prepares and cooks various types of pastries and decorative food displays.
- Checks the quality of raw and cooked food products to ensure they meet the established standards.

Ensuring Exceptional Customer Service
- Provides exceptional services to satisfy and retain customers.
- Manages day-to-day operations to meet or exceed customer expectations.
- Guides and assists individuals to understand guest needs, providing guidance, feedback, and coaching when necessary.
- Sets a positive example for guest relations.
- Empowers employees to deliver excellent customer service.
- Emphasizes guest satisfaction during departmental meetings and focuses on continuous improvement.
Maintaining Culinary Goals
- Sets and achieves goals, including performance, budget, and team goals.
- Develops specific goals and plans to prioritize and organize work effectively.
- Trains employees in safety procedures and ensures their adherence to prevent accidents and control costs.
- Manages supplies and inventories in line with the budget.
Supporting Training and Development Activities
- Ensures disciplinary procedures and documentation are completed following standard operating procedures.
- Participates in training staff on menu items, ingredients, preparation methods, and tastes.
- Reviews staffing levels to ensure optimal guest service and operational objectives are met.
- Administers property policies fairly and consistently.
- Assists in the interviewing and hiring process of team members with appropriate skills.
Additional Responsibilities:
- Provides information to supervisors, co-workers, and subordinates through various communication channels.
- Analyzes information and evaluates results to solve problems effectively.
- Raises issues to the department manager and Human Resources when necessary.
- Participates actively in relevant meetings.
